OK, technically National Unicorn Day is Thursday (April 9). But if your schools are on Spring Break like ours are and your sweet kiddos are driving you crazy full of energy, I have a fun and themed mocktail to occupy some of their time.

My color changing unicorn lemonade is one part science experiment and one part fun drink that's easy to do, makes only a small kitchen mess, and requires minimal supervision (especially once the simple syrup is made).

Color Changing Unicorn Lemonade

Butterfly pea flower syrup floats below fresh squeezed lemon juice (density!) creating a pair of layers that when stirred together react (ph levels!) to create a change to the color of the drink and form a delicious lemonade for you kiddos to enjoy.
