Easy Tropical Drink Recipes

Hi Reader !

This week my daughter came home from the first day of school post-spring break asking for a piña colada mocktail and I joined right in. We are finally seeing some sunshine and warm days in Michigan, which has us all thinking about fruity, tropical drinks.

This week's new recipe uses the same cream of coconut that I use in my piña colada recipe, but this time it's getting mixed with lime and tequila for a very grown up coconut margarita.

I'm opting for a salt/sugar rim on this drink instead of the traditional toasted coconut rim because I don't like to chew my cocktails. If you do, feel free to swap the salt/sugar for toasted coconut. Cocktails are nothing if not customizable!
